These cookies are so easy; just three ingredients are all it takes to have a taste of fall. It is a cake mix base,…so you can use carrot cake or devils food for a different spin on the recipe, but we love the Pumpkin Spice right now. Note: you don’t need the eggs or oil for the cake recipe. It truly is just 3 ingredients. The cookies don’t rise or expand a lot because of the lack of added fat, and they end up more like little bites of cake than a traditional cookie. They are perfect for enjoying with your Pumpkin Spice Latte!

ALLISON’s EASY 3 PUMPKIN COOKIES

Ingredients

  • 1 box of spice cake mix
  • 1 can of pumpkin puree (not pumpkin pie filling)
  • 1 bag of semi-sweet chocolate chips

Instructions

  • 1. PREHEAT oven to 375 degrees
  • 3. MIX pumpkin and cake mix together until moist
  • 5. FOLD IN chocolate chips
  • 6. SCOOP onto parchment-lined cookie sheet
  • 9. BAKE 12 minutes
  • 10. COOL and store in airtight container in the fridge

Makes 36 cookies.
