Courtney’s Pumpkin Muffins
Ingredients
- 2 cups pumpkin
- 3 cups sugar
- 4 eggs
- 3 1/2 cups flour
- 1 cup oil
- 2 tsp. baking soda
- 1 tsp. baking powder
- 1 1/2 tsp. salt
- 1 tsp. nutmeg
- 1 tsp. cinnamon
- 1/4 tsp. cloves
- 1/4 tsp. allspice
Instructions
Mix pumpkin, sugar, eggs, and oil. Sift all dry ingredients and add to the pumpkin mixture. Fill muffin tins about 3/4 full and bake at 400 degrees 20 minutes for full size; 10-15 minutes for mini muffins.
