KEN’s JALAPENO CORNBREAD
Ingredients

2 boxes Jiffy Cornbread Mix

2 eggs
- 2/3 c. milk
- 1 12oz jar sliced jalapenos – diced (reserve 15 slices for garnish)
- 16 oz mild grated cheddar cheese

1 cup sugar
Instructions
- 1. PREHEAT oven to 400 degrees
- 2. GREASE 9×13 glass baking dish
- 3. MIX 2 boxes of Jiffy cornbread mix with eggs, milk and sugar
- 4. ADD jar of jalapenos with juice
- 5. FOLD IN grated cheese
- 6. POUR into glass dish
- 7. ADD jalapeno slices to the top
- 8. POUR into baking dish and cover with aluminum foil
- 9. BAKE 45 minutes
- 10. UNCOVER and bake additional 5-10 (until toothpick inserted in center comes out clean)
Allow to cool in pan 10 minutes and then slice and enjoy warm!
